Ozark Root Vegetable Hash

1 cup sweet potatoes
1 cup red potatoes
1 cup purple potatoes
1 cup parsnips
1 cup celeriac
1 cup onion
1/2 cup garlic
Canola oil
Salt and Pepper to taste

Preheat oven to 375° F. Thoroughly wash vegetables and cut into 1/2-inch cubes. Toss the vegetables in the canola oil, then salt and pepper to taste. Place vegetables on a baking sheet and roast for approximately 20 minutes. Alternatively, roast each type of vegetable separately for 8 minutes, then combine and roast together for 10-12 minutes. This will allow greater control over the doneness of each root vegetable.
