Pasta Primavera

½ tbsp. shallots
½ tbsp. garlic
1½ tbsp. butter
½ cup white wine
1 tbsp. fresh oregano
1 cup heavy cream
¼ parmesan cheese
salt and pepper to taste
1 yellow squash
1 zucchini
½ cup cherry tomatoes
½ lb. broccoli 
½ red onion 
2 cups mixed bell peppers
5 cups noodles, cooked

Heat a medium sauce pan on medium heat. Add 2 tablespoons of extra virgin olive oil. Add the shallots and garlic, then stir for one to two minutes. One by one, add the veggies. Let them sweat for two minutes. Deglaze the pan with the white wine, reducing the wine to half. Add the heavy cream and butter, seasoning with salt and pepper. Add the fresh chopped oregano and steamed for three to four minutes. Add the Parmesan. Add the noodles. Mix well. Serve garnished with cheese and fresh herbs.
